Skewers with sweet chilli and garlic marinade

The weather has been great these last few days in Umeå, so why not make the most of it and have a barbeque?! I made skewers with tofu, vegetables that I marinated with a delicious but simple marinade with just three ingredients.

Cooking time: 1.5 h | 4 servings, 20 skewers

Ingredients:

Skewers

  • 20 skewers
  • 460 g firm tofu
  • 350 g mushrooms
  • 200 g zucchini
  • 2 red onions
  • 1 yellow pepper
  • 1 red pepper
  • Salt & peppar

Marinade

  • 2 dl sweet chili
  • 0,5 dl mushroom soy
  • 6 cloves of garlic
  1. Chop the tofu and the vegetables to a good size, put in a bag and if they don’t fit into one, use two. Add salt and pepper.
  2. Mix sweet chili, soy and pressed garlic in a bowl. Pour the marinade into the bag of vegetables and tie. Marinate in the fridge for at least 30 mins.
  3. Turn on the oven to 65°C, (you don’t need to do this if you have a barbecue big enough to fit all the skewers).
  4. Fill the skewers until all vegetables are used. Grill half of the skewers until golden brown, put in the oven while you do the rest.
  5. Serve with for example, a nice salad or potato wedges. Use the marinade that’s left in the bag as a dipping sauce.
