The weather has been great these last few days in Umeå, so why not make the most of it and have a barbeque?! I made skewers with tofu, vegetables that I marinated with a delicious but simple marinade with just three ingredients.
Cooking time: 1.5 h | 4 servings, 20 skewers

- 20 skewers
- 460 g firm tofu
- 350 g mushrooms
- 200 g zucchini
- 2 red onions
- 1 yellow pepper
- 1 red pepper
- Salt & peppar
Marinade
- 2 dl sweet chili
- 0,5 dl mushroom soy
- 6 cloves of garlic
- Chop the tofu and the vegetables to a good size, put in a bag and if they don’t fit into one, use two. Add salt and pepper.
- Mix sweet chili, soy and pressed garlic in a bowl. Pour the marinade into the bag of vegetables and tie. Marinate in the fridge for at least 30 mins.
- Turn on the oven to 65°C, (you don’t need to do this if you have a barbecue big enough to fit all the skewers).
- Fill the skewers until all vegetables are used. Grill half of the skewers until golden brown, put in the oven while you do the rest.
- Serve with for example, a nice salad or potato wedges. Use the marinade that’s left in the bag as a dipping sauce.
