Snickers ice cream

Okaaay so this ice cream is awfully good!!! It’s definitely one of the best ice creams I’ve ever had… It’s creamy, smooth and stuffed with delicious things. Peanut butter, homemade caramel sauce, chocolate, peanuts.. you get the gist! It reminds a little of my snickers cake, so good. You seriously have to try this!!!!

Cooking time: 1h | About 1 liter


Ice cream:

  • 2.5 dl plant-based double cream
  • 1 tsp vanilla extract
  • 200 g vegan creme cheese
  • 0.5 dl icing sugar


  • 100 g dark chocolate
  • 2 dl peanuts
  • 1/2 dl peanut butter
  • Caramel sauce

Caramel sauce:

  • 2 dl plant-based cream
  • 0.5 dl golden syrup
  • 2 tbsp sugar
  • 1 tsp vanilla sugar
  • 1 tsp sea salt
  • 0.5 tbsp butter


Caramel sauce

  1. Put all the ingredients except the butter in a pot, bring to a boil and then simmer on medium high heat until about 1/3 is left.
  2. Remove from the stove and add the butter, allow to cool completely.

Ice cream

  1. Whip the cream and the vanilla extract together for about 1-2 minutes, until soft peaks form.
  2. Add the creme cheese and keep whipping, it doesn’t matter if it’s lumpy. Lastly, add the icing sugar. The batter should be pretty thick.
  3. Chop the chocolate and peanuts and stir together with the ice cream (save some for topping). Slowly add the caramel sauce and peanut butter. Don’t stir too much.
  4. Put plastic film in a rectangular baking tray, about 20×30 cm. Pour the ice cream batter into the tray. Top with chocolate and peanuts, and if you want to, some caramel sauce and peanut butter. Top with some peanut butter and caramel if you want.
  5. Leave in the freezer for about 6h. Take out 10 minutes before serving. Dip an ice cream scoop in hot water to make balls.
