Vegan meatballs with mashed potatoes, raw lingonberries and gravy

When it comes to food, this is one of the better things Sweden has, not because Sweden has a huge food culture however, this is extremely good. I made the veggie balls on “formbar färs” from “Anamma” as it is easier to shape but you can use whichever vegan mince you have available, however, add some extra corn starch. I wanted to bring out the classic homemade meatballs and so I added some cinnamon and I thought it turned out very well. Then of course we have a classic mashed potato with a lot of butter.. Raw lingonberries and a super simple gravy that takes a maximum of three minutes to make.

Ingredients:

Vegan balls

  • 850 g mince
  • 1 yellow onion
  • 1/2 dl vegan cream
  • 2 tbsp mushroom soy
  • 2 tbsp vegetable stock
  • 2 tsp dijon mustard
  • 1 tsp cinnamon
  • 2 dl breadcrumbs
  • 2-3 tablespoons cornstarch
  • Vegan butter to fry in, very little needed

Mashed potatoes

  • 1 kg of potatoes
  • 2 dl milk
  • 4 tablespoons vegan butter
  • Salt
  • White pepper

Gravy

  • 50 g butter
  • 1/2 dl wheat flour
  • 3 dl cream
  • 1.5 tbsp mushroom soy
  • 1/2 tbsp vegetable stock

Raw sweetened lingonberries

  • 250 g lingonberries
  • 1/2 dl sugar

Instructions:

  1. Let the mince thaw until completely soft, either at room temperature or in a microwave.
  2. Rinse and peel the potatoes, fill a saucepan with water and add the potatoes, do not turn the stove on just yet.
  3. Finely chop the onion, fry in oil until softened. Mix all the ingredients for the mince. Season with salt and pepper. Roll a ball and fry in a little butter. Roll a ball and fry in a little butter. (I barely used any butter).
  4. Meanwhile, you can boil the potato water. Add salt, put a lid on and cook until soft, rather too soft than too hard.
  5. If you are happy with how the vegan ball turned out, just roll the rest and fry. Otherwise you can adjust with extra cornstarch if too loose.
  6. In a saucepan, melt the butter into the gravy. Add flour while stirring, pour 1 dl of cream at a time and stir until free of lumps. Add soy sauce and vegetable stock. Let simmer for a few minutes.
  7. Mash the potatoes when they’re ready, add milk and butter. Taste with salt and white pepper.
  8. Pour lingonberries and sugar into a saucepan, heat until the sugar has melted. I like when raw lingonberries still have a sour taste, it goes well with the rest of the meal, however if you prefer, you can add 1/2 dl extra sugar if you want.
  9. Serve the vegan balls with mashed potatoes, gravy and raw sweetened lingonberries.
