Ingredients:
- 1 yellow onion
- 3-4 garlic cloves
- 500 g chopped tomatoes
- 1 vegetable stock
- 1 tsp paprika
- 1/2 tsp cumin
- 2 tbsp sambal oelek (or any other chilli paste)
- 1 tbsp mushroom soy
- 300g soy mince
- 230g black beans
- 230g haricot beans
- 200ml water
- 1 can of sweetcorn
- Salt och peppar
Instructions:
- Chop the onion and garlic finely. Drain and rinse the beans.
- Cook the rice according to the instructions.
- Fry the onion and garlic with oil until soft.
- Add the chopped tomatoes, bouillon, spices, chilli paste and soy sauce. Stir well and add the mince, beans and water. Simmer for a few minutes.
- Add the sweet corn. Salt and pepper to taste. Serve with rice!
